Beef and Brew

The weather is getting cooler outside and it’s the perfect time to make this beef stroganoff-esque recipe to warm you up. And it’s so easy – just throw it in the pot and let it cook! YUM!

Beef and Brew

Serves 4

1 tbsp olive oil
1 medium onion, chopped
1 green bell pepper, chopped
2 pounds beef round steak, trimmed and cut into 1 inch pieces
1 cup light beer
3/4 cup water
1 bay leaf
1/2 tsp dried thyme
Dash of cayenne pepper
1/2 tsp salt
1/4 tsp pepper

1/4 cup water
2 tbsp flour

8oz hot, cooked egg noodles

Heat the olive oil in a heavy pot over medium-high heat. Add the onion and bell pepper and cook until the onion is translucent, about 5 minutes. Add the beef to the pot and brown all sides. Add in the beer, water, bay leaf, thyme, cayenne pepper, salt and pepper. Stir together and bring to a boil. Reduce heat and simmer for an hour and a half or until meat is tender.

Stir together the 1/4 cup water and flour. Temper and stir into meat mixture. Cook and stir until thickened and bubbly. Continue to simmer for 2 more minutes, and then serve over hot egg noodles.
